 In a remote location in the Colorado Rockies there lives a Ponderosa Pine that has thrived for nearly one thousand years. The United States Geological Survey bestowed a name upon this ancient specimen: OLD SOLITAIRE. this wise and sacred tree has been drinking the water from Spring44 since it was a pinecone seedling. Old Tom Gin is a classic spirit from the 19th century, sweetened and barreled. Spring44 uniquely blends our spring water with the essence of this majestic pine along with an extraordinary botanical recipe that includes juniper, lemongrass, galangal and coriander. We are an American craft distiller that uses COLORADO ROCKY MOUNTAIN ARTESIAN SPRING WATER, naturally filtered by the earth. The terroir of Spring44 is distinctive and alive. No Municipal water touches our gin. Perfect gin requires perfect water.

THE DISTILLERY

On a beautiful summer night two lifelong friends, Russ and Jeff, made their traditional hike to a virgin spring for a midnight drink under the stars. The tradition of drinking directly from the spring started when Jeff was a small boy. In 1969 Jeff's father purchased property in an extremely remote area in the northern Colorado Rocky Mountains that held the unique distinction of being completely surrounded by Roosevelt National Forest. Drinking from the spring at 9044' was always a coveted activity. The water so cold, so pure, fresh from the earth always tasted extraordinary and provided a visceral connection to nature. On this particular night, inspiration occurred. Russ exclaimed: "This is the best water on earth, it's liquid energy! Do you know what we have here?!"

And an idea was born. What if we could share this incredible resource with others and build a business that would provide a model for a way of life? They pondered that for a while. Then they created Spring44, after its namesake.

Nice juniper presence that is perfectly complemented with light citrus notes and hints of toasted spice. It finishes long and rounds out nicely with a touch of warm spices.

2 oz Spring44 Old Tom Gin
1 oz lime juice
1 oz simple syrup
5 mint leaves

shake ingredients with ice. pour into coupe and enjoy. garnish with mint

Spiced Honey Old Tom Cocktail
2 oz Spring44 Old Tom Gin
1 oz lemon juice
1 oz orange or clementine juice
1-2 dashes orange bitters
1 oz spiced honey syrup*

Spiced honey syrup: bring 1/2 cup water, 1/2 cup honey, 2 sprigs rosemary, 2 cinnamon sticks, 1 tablespoon cardamom pods, 1 inch sliced ginger, zest of 1 orange and 1 teaspoon vanilla extract to boil for 2-3 minutes. Cool and strain.
