The name "berbere" means "hot" in Amharic (an Ethiopian Semitic language), and it's a fitting moniker for a combination that starts with a tongue-tingling surge of cayenne, aleppo, black, and white peppers. The heat fades away, leaving behind a delicate tingle of ginger, mace, cinnamon, and cloves.
